Calamity Jane Cookies

The cold, stark season of winter has settled over the Black Hills...snow and ice make this a frozen wonderland...The solution to beat the winter bison blues - warm up by baking decadent 'Calamity Jane Cookies.'  This recipe is a Custer Playhouse favorite among the theatre's cast and crew.

'Calamity Jane's'

Ingredients:
1 1/2-2 cups of Gluten Free All Purpose Baking Flour * (You can purchase premade varieties - Pamela's, King Arthur Flour and Mama's Gluten Free are personal suggestions, or make your own GF AP Flour mix with Adele's recipe at the bottom of this page)

3 cups Gluten Free Rolled Oats (I recommend Bob's Red Mill for oats)

1 cup butter (softened) - you can also use Coconut Oil, if preferred.

1 cup Brown Sugar
1/2 Granulated Sugar

1 tsp. vanilla (organic vanilla, not artificial flavoring)
1 tsp. Baking Soda (if you live at higher elevations, don't add baking soda, otherwise you'll have an explosion in the oven)

A pinch of sea salt
1 tsp. cinnamon
2 extra large eggs
1 teaspoon xanthan gum
1/2 cup raisins (unsulfured)
1/2 cup Craisins
1 cup ENJOY LIFE chocolate chips
(You can add fresh coconut as well)

Flour Mix (you can mix up many cups at once, making it easier during the baking process - one cup of this mix is an equivalent for most non-gluten free equivalent bread and cookie recipes.  I'll share a high-fiber blend soon.
1/2 cup Brown Rice Flour
1/2 cup White Rice Flour
1/2 cup Tapioca Flour
1/2 cup Corn Starch
1/4 cup Sorghum Flour
pinch of flax seed for breads, if you want more elasticity

Directions

Preheat oven to 350°F. Beat butter and sugars together until smooth.
Add vanilla and eggs; beat well. In a separate bowl, blend flour,
cinnamon, baking soda, salt and Xanthan Gum. Stir flour blend into wet
ingredients. Add oats and raisins, craisins and chocolate chips and mix well. Drop rounded
tablespoons of dough onto un-greased cookie sheet. Bake for 10 – 12
minutes, or until golden brown. Cool one minutes then transfer to wire
rack. Makes about 4 dozen cookies.

 *Eggless Option: Mix together 2 Tb. Flaxseed Meal with 6 Tb. of water
and let sit for a minute. Add to recipe as you would the eggs.
